There just to many variables. I mean my favorite changes week to week. My first Jazz album (literally a LP) was Miles Davis 4 and More with George Coleman on tenor sax. I fell in and listened to "So what" almost endlessly for months. So technically George Coleman's solo on so what is one of my favorites but Ronnie cuber's opening introduction at the San Sebastian Jazz Festival in Spain in 2003 with SoulBop band. Let's not forget Dave Ellis with the Charlie Hunter Trio playing Nirvana's "Come as you are". There is too much to include in a post like this.
Phil Woods, "You Must Believe In Spring" w/Michel Legrand, from the album Live At Jimmy's. Transcendental stuff, takes me to another place every time I hear it.
can't really narrow it down to one favorite. here's the first sax solo that caught my attention...
