Well it's of course very personal, so everything I say here has a big IMHO attached to it.
Biggest difference for me is that with clarinet you don't really play 'on the sound' as you do on saxophone, as the clar does not have the sonic impact a saxophone does. This is usually where you can distinguish between a clarinet player and a sax player playing clarinet. Second it's the type of lines that you play. If you can, grab a copy of this album and just listen to the tune called 'The bright one'. Bop clarinet at it's finest.

Just to jump in and clarify----we are not making a metal clarinet mouthpiece. I am wondering if you might be thinking of the Durga clarinet mpc? We will be releasing that soon, but it will be a hard rubber piece.
