Could a modern bari mouthpiece be shortened and chamber enlarged like they do for C-melody saxes from tenor mouthpieces to suite a high pitched bari from 1885?

Yes, but it may not be neccessary. It may not work any better than a modern piece pushed on farther. Do you have this situation and are dealing with intonation problems? If so, what are the specific problems and why do you care? (That is, where do you hope to play a HP bari sax?)
I would like to play it in tune because it has a nice deep tone but is 25 -50% sharp , so if I I can't sell it I''ll keep it and play it at blues jam's

You may be able to get it to play in tune with itself, but not other modern LP instruments. If you had an ensemble using all HP instruments, you have a chance.
