I use an Apple ibook and was wondering wheter it makes sense to use a better soundcard and, if yes, would it fit into to ibook?

Depends on whether your ibook has a firewire input. If it does, there are loads of pro brands to choose from - Midiman, Emagic, MOTU, Digidesign.

Alternatively, if your ibook has only USB ports, you could also get a USB soundcard. The above brands apply. Firewire is touted as the faster of the 2, but I've got friends using USB audio interfaces without much problems.

These are ALL external soundcards. The Sound"card" in your ibook is actually a chip, and I seriously doubt you could replace that.

It also depends on what purpose you want to use your ibook for. In my experience, the onboard chip is enough for basic use, just don't expect to be able to run 8 audio channels at once without hiccups!
