We know that using mouthpiece and reed alone should produce A for alto and G for tenor - but what pitch should a c-melody mouthpiece give?

G# is about right. It is not necessary to have it perfectly in tune, with the needle of a tuner right on the zero mark, with this method. It is to teach the approximate correct embouchure tension.
